Coconut Macroons Cookies

Coconut Macroons:
Ingredients :
Maida 1/3 cup
Sweetened condensed milk 200gm
Coconut grated 2.5 cup
Vanilla essence 1/2 tsp
Pinch of salt
Baking soda 1/4 tsp
Method:
1. Mix all ingredients one by one.
2. Preheat the oven at 170 degree
3.  Take a headed spoon of the dough and arrange it in greased moulds.
4. Bake for 20 mts at 170 degree
5. Edges and top layer will be lightly browned.
6. Take it from oven and cool it in wire rack.

Chewy crispy coconut macaroons are ready.

Shortbread Cookie

Shortbread Bread Cookie
Ingredients:
Maida - 1 cup
Powdered sugar - 1/2 cup
Melted Ghee - 1/2 cup
Baking soda 1/4 tsp
Almonds and cashews broken -1/4 cup
Cardamom powder - little
Method:
1. Mix Ghee and Powdered sugar in a bowl.
2. Mix Maida, baking soda, cashews almonds,Cardamom in separate bowl.
3. Slowly add dry mix (2) to wet mix.
4. make a firm dough and roll and cover it with cling film and keep in fridge for an hour.
5. Take the dough out and make small balls and flatten a little and arrange in parchment paper. Sprinkle little Badam mixture on top of cookies.

6. Preheat the oven at 170 degree and bake the cookies for 20 mts.
7. Sides and top will be lightly browned. Take it out and cool it in a wire rack for 10mts.
Yummy cookies are ready.




Ragi laddu

Ragi laddu
Ingredients
Ragi flour -1 cup
Jaggery grated - 1 1/4 cup
Coconut grated - 1/2 cup
Badam, cashews 1/4 cup
Groundnuts little.
Ghee
Method
1. Dry roast coconut, Badam, cashews and ground nuts and grind to fine powder.
2. Add grated jaggery to this and give a pulse
3. Dry roast ragi flour till nice aroma comes.
4. Mix grinded powder along with ragi flour.
5. Heat ghee and pour into mixture and you can add roasted cashews and make laddus.
Healthy ragi laddu is ready.

Ramya's Baked nippatu

Baked nipattu 
Whole wheat flour;1 cup
Maida - 1 cup
Salt -1 tsp
Sugar - 1 tsp
Sesame seeds- 1 tbsp
Baking soda- 1 tsp
Roasted peanuts - 1/4 cup
Curry leaves
Coriander leaves
Green chillies 3-4 chopped finely
Onion - 1 finely chopped
Oil 3 tbsps
Water very little
Method
Mix wheat, maida, salt, sugar, baking soda, sesame together. Grind peanuts coarsely. Add the peanuts, onion, g. Chillies, curry leaves, coriander leaves and the oil. Then knead it using warm water little by little. The dough should be soft but not sticky. Cover it with a damp cloth and leave it for 1/2 an hour.  Then take a small ball out of the dough abd roll it by keeping it in between 2 thick plastic covers. Cut into round shapes using a round bottle cover. Fork it. Preheat the oven to 200 C and arrange these in greased pan and bake for 15-20 mins. In between toss the nipattus.
