Foxtail Millet / Korra / Thinai Dosa

Foxtail Millet / Korra / Thinai Dosa Recipe:


Millets: 

Millets are highly nutritious, non-glutinous and not acid forming foods. Please check this page for more information about millets.

After knowing the nutritious information about millets, i have decided to include millets in everyday meal. Here is the foxtail millet dosa recipe which i tried today. Please try it yourself.

Ingredients:

Foxtail Millet: 4 cups
Urad dal : 1 cup
Methi seeds : Little

Method:
1. Soak Foxtail Millet and urad dal seperately for 8 hours.
2. Grind Urad dal and Foxtail Millet seperately along with Methi seeds.
3. Mix the batter well with required salt and allow it to ferment.
4. Once its ferments, prepare dosas. 

Yummy Thinai Dosa is ready to serve. Onion,Garlic Redchilli + Tamarind Chutney goes well with it.

Tutty Fruity Cup Cakes

I have decided to make Tutty Fruity cup cakes for the stall in our society.

Ingredients:

All Purpose Flour - 2 cups
Eggs- 4
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Butter - 200 gm
Sugar - 1 cup
Tutty Fruity - how much ever u need
Milk - little

Method:


1.. Beat Butter and sugar till it becomes creamy.
2. Add eggs one by one and beat the mixture.
3. Sieve flour, baking powder, baking soda in a seperate bowl
4. Fold the flour mixture in to the butter creamy mixture slowly and mix well.
5. Add little milk to loosen the batter.
6. Pour the batter in to the cups and line up in to the cup cake mould.
7. Decorate each cup with tutty fruity.
8. Bake in a preheated oven @ 180 deg for 15 mts.

Yummy Tutty Fruity cup cakes are ready.

Vasanthi's Speciality Dates Cake

                                                                Dates Cake
 Ingredients:
Seedless honey dates – 1.9 cups
Tea bag -1
Water= 300 ml
Butter (Content with salt) – 1.9 cup
Brown sugar –  ½ lb
Sugar – ½ lb  ( You can use whole white sugar (1lb or 1.5 cup if u prefer less sugar) as well
Egg – 8 whole egg
Ravai – 1.5 cup
Wheat flour – 1/4 cup
Baking Soda = 1 tsp
Baking powder – ¾ tsp
Vanilla essence – 2 tsp
Cashews – ½ lb / 1/2 cup ( No limit for this, how much you add this item that gives taste, if you don’t like you can reduce this quantity)
Jathikkai (Nutmeg) crated – 1 tsp

Procedure:

1.Cut the dates into small small pieces.  
2.Boil the water and put the tea bag(2 tsp of tea powder)  in it.  Let the black tea warm and pour the black tea into the dates pieces.  Add the baking soda into it.  This will make the dates to be more soft.   Let it be there for 4-6 hours.  ( You can keep it for whole night too.  But definitely not less than 4 hours, but can be more than 6 hours).    
3. Now, take the butter, brown sugar, sugar and all the eggs in a bowl.  Beat very well till the butter melts nicely.    Keep this mixture separately. 
4.  Take another bowl and mix ravai, wheat flour and baking powder and mix nicely.  Keep this mixture separately.     
5. Now, add all these 3 mixture slowly into a big bowl (after 6 hours of soaking the dates).  Mix mix and mix and do it well till all 3 mixtures mix nicely.  
6. Add Vanilla essence, nutmeg  too with this mix. 
7. Then, pour this mixture into a cake tray and decorate with the cashews.  If you like mix the cashews into the above mix as well.  That’s your choice.   
8. Bake this mix for exactly 1 hour @ 350 F.    or Bake until toothpick comes clean when you pierce in the center of the cake. Now, tasty dates cake is ready for you to serve.  Enjoy the cake!

Sponge Cake Recipe

Ingredients: 

1 cup butter(kept at room temp)
 1 cup flour (we don't get all purpose flour in india, you can try using bluebird's self raising flour)
1 cup castor sugar
4 medium eggs
2tsp vanilla
1/2 tsp baking soda
1 tsp baking powder
 little milk to loosen

Method: 

1. Mix butter and sugar to a creamy state. if u have hand mixer you can do it easily. approximately 2 to 4 mts. to reduce the time, u can powder the sugar and try.
2. Beat in eggs one at a time and mix well.
3. sieve the flour, baking powder, baking soda in a seperate vessel.
4. Fold the flour little by little in to the butter mixture.. and mix well.. 
5. add vanilla essence and mix . (do not over mix )
6. if the mixture is too tight.. slightly add milk to loosen it. 
thats it ur cake mixture is ready..
7. pour the mixture in to the cake pan with baking sheet on it.

8. bake it in a cake pan covering it with foil. for about 40 mts at 180.

once its baked just pierce the cake with the help of tooth pick in the middle of the cake. it should come out clean. if not, u can bake it again for 5 mts(depends)..

once its done keep it in the cooling rack (remove from the pan) till its cool down.

Now your yummy sponge cake is ready.
